Read the corporate bios on the company website. While the specific hiring manager may not be listed, it is safe to assume that senior level management will have hired in their own image and may provide insight to relevant experience you have that should be highlighted.
The key word is "professional." The hiring manager is interested in someone who can do the job so avoid making any references to anything personal that may seem gratuitous.
The likelihood that you will have something to add to your resume that wasn't already there is rare but the preparation step is worth the effort.
Presenting relevant information on your resume that is based on what you know about the company and its people should be your goal.
